Ingredients:

2 cups water or vegetable broth
1/2 red onion, diced
1/4 cup fresh cilantro, chopped
2 tablespoons olive oil
1 teaspoon cumin
1 can (15 oz) black beans, rinsed and drained
Salt and pepper to taste
1 cup quinoa
1 cup corn (fresh, frozen, or canned)
1 bell pepper, diced
1 avocado, diced
2 tablespoons lime juice
Directions:

Gather all the ingredients: 1 cup of quinoa, 1 can of black beans (drained and rinsed), 1 cup of corn (fresh or canned), 1 red bell pepper (diced), 1 cup of cherry tomatoes (halved), 1 avocado (diced), 1/4 cup of cilantro (chopped), and lime for dressing.

Rinse and cook the quinoa. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until water is absorbed.

While the quinoa cooks, prepare the vegetables. Dice the red bell pepper, halve the cherry tomatoes, and chop the cilantro. Set aside in separate bowls.

Drain and rinse the black beans in a colander, and then add them to a large mixing bowl.

Add the cooked quinoa to the mixing bowl with black beans, followed by the corn, diced red bell pepper, halved cherry tomatoes, and diced avocado.

Chop the cilantro and add it to the large bowl with all the ingredients.

Squeeze the lime over the salad for dressing, then toss everything together until well combined.

Taste the salad and adjust seasoning if necessary. Serve the salad chilled or at room temperature !

I was excited to try the Black Bean Quinoa Salad, but it was a letdown. 😩 I adhered to the recipe precisely, yet it turned out dry and bland. The beans were fine, but the entire dish felt like chewing on cardboard. I might have missed something, but I won't be making this again. Very disappointing!
