1 tablespoon sugar or honey
1 tablespoon caraway seeds
1 tablespoon vegetable oil or melted butter
1 ½ teaspoons salt
1 ½ cups warm water (110°F)
2 cups whole rye flour
1 teaspoon instant yeast

Gather all ingredients needed for the pumpernickel rye bread: 2 cups rye flour, 1 cup all-purpose flour, 1 ½ cups warm water, 2 teaspoons salt, 2 teaspoons sugar, 1 tablespoon active dry yeast, and 2 tablespoons molasses.

In a large mixing bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5 minutes until it becomes frothy.

Add in the molasses, rye flour, and salt to the yeast mixture. Mix until a sticky dough forms.

Gradually incorporate the all-purpose flour, mixing until a firm dough forms. Knead the dough on a floured surface for about 10 minutes until smooth.

Shape the kneaded dough into a ball and place it in a greased bowl, covering it with a damp cloth. Allow it to rise for 1 to 2 hours until doubled in size.

Preheat the oven to 375°F (190°C). Punch down the risen dough and turn it out onto a floured surface. Shape it into a loaf.

Place the shaped dough into the loaf pan and cover it with the damp cloth once more. Let it rise for another 30-45 minutes until it puffs up.

Once risen, bake the bread in the preheated oven for 35-40 minutes or until the top is dark brown and sounds hollow when tapped.

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
