2 tablespoons olive oil
Salt and pepper to taste
1 cup quinoa
2 medium zucchinis, diced
1 tablespoon balsamic vinegar (optional)
1 red onion, diced
1 cup cherry tomatoes, halved
1 teaspoon garlic powder
1/4 cup feta cheese (optional)
2 cups water or vegetable broth
1 red bell pepper, diced
1/4 cup fresh parsley, chopped
1 yellow bell pepper, diced
Directions:

Gather all ingredients needed for the quinoa salad and roasted vegetables.

Preheat the oven to 400°F (200°C).

Rinse the quinoa under cold water for about a minute to remove its bitter taste and then drain it.

Place the rinsed quinoa in a pot with 2 cups of water, and bring it to a boil.

While the quinoa is cooking, chop the mixed vegetables into even-sized pieces and toss them in a bowl with olive oil, salt, and pepper.

Spread the seasoned vegetables on a baking sheet and place them in the oven.

Once the quinoa has absorbed all the water (about 15 minutes), fluff it with a fork and let it cool.
